BBQ is the hardest menu on a trailer: weight, heat and smoke, all at once and for hours at a time. A unit built for a griddle will not carry a smoker. Here is how we build one that will.
A quarter-inch steel offset smoker weighs between 400 and 900 pounds. It does not go on just any floor. We reinforce the frame under the smoker, shift the load toward the axles, and set tongue weight so the unit does not sway on the highway. If the smoker rides on the rear porch, we build a supported platform with transport tie-downs.
Wood and charcoal give you the flavor and complicate the permit: several counties require live fire to sit outside the enclosed space, or under a hood rated specifically for solid fuel. We tell you what your county requires before we build, and configure the unit accordingly — a fold-out exterior grill, or an interior gas line with a supplementary charcoal grill outside.
The hood on a taco trailer does not work here. Wood smoke loads filters far faster and needs higher exhaust volume, accessible baffle filters for weekly cleaning, and duct with a cleanout. We size it for the equipment you will actually run, not for the code minimum on paper.
Brisket comes off the smoker and needs to rest hot. We install a heated holding cabinet or a steam table with independent controls, plus a stainless carving station with a sanitary board. That is the difference between serving at the pace of the line and running out two hours in.
A ventilated exterior compartment separated from the food area — a health requirement in every state we deliver to — sized for a full shift, so you are not carrying wood through the trailer with customers at the window.
With a smoker and grill running, an uninsulated food trailer becomes unworkable in a Georgia or Alabama summer. We insulate walls and roof and provide cross-ventilation or a mini-split prep. It is what lets you work the whole shift.
Live-fire and solid-fuel rules vary widely by county. Confirm with your local health department and fire marshal before finalizing the layout.
