How We Build Out a Coffee and Dessert Trailer

A coffee trailer looks simpler than a taco trailer and is not. Here the entire build hinges on electrical capacity and water quality.

Electrical sized for espresso

A two-group espresso machine draws 20 to 30 amps on its own, and the grinder, refrigeration and display case are separate loads. We build a panel with independent circuits, commercial-gauge wiring, and a connection for a generator or a 50-amp site hookup. Most used coffee trailers we see cannot run the machine and the refrigerator at the same time — the breaker trips mid-line.

Filtered and softened water

Espresso flavor depends on water, and so does the life of the machine. We install sediment and carbon filtration plus a softener ahead of the boiler. Without softening, the hard water across the Southeast scales a boiler within months, and that repair costs more than the entire filtration package.

Milk refrigeration and a cold bar

Undercounter refrigeration next to the machine so the barista never leaves their station, plus room for pitchers, syrups and ice. If you sell frappes, we allow the circuit and space for a commercial blender with a sound enclosure — in a small trailer, an unenclosed blender drowns out the conversation with the customer.

Display case for desserts

Refrigerated or ambient depending on what you sell, mounted at window height. For churros, crepes or waffles we add the matching griddle or fryer under a hood; for ice cream, a display freezer on its own circuit. Dessert that is visible is dessert that sells, so the case goes at the front, not the back.

Sinks and what the inspector expects

Even without hot cooking, you still need a three-compartment sink, an independent hand sink with hot water, and fresh and waste tanks. This is the most common misconception on coffee trailers: that not handling raw protein means lighter rules. It does not.

Window, bar and experience

A generous exterior bar, good task lighting over the prep area, and space for a legible menu. In coffee the customer stands in front of you for two or three minutes — the unit has to look good up close, with clean finishes and no visible wiring.
