What It Takes to Operate a Food Trailer in Alabama

In Alabama your permit comes from your county health department, and before you operate the unit has to clear a plan review against the state’s official checklist.

1. The category system

Alabama sorts mobile units into categories based on what you plan to prepare, and the category decides what equipment you are required to carry: refrigeration with thermometers on every unit, hot holding equipment from category 2 up, and cooking equipment from category 3 up. Settling your menu before you build saves you from rebuilding the unit.

2. What they check on the trailer

A potable water tank that is properly sized, securely affixed, easy to clean and durable. A wastewater tank at least 15% larger than the potable tank. Hot and cold water to every piece of equipment that needs it, with a water heater sized for peak demand. A handwashing sink with hot and cold water, and a two- or three-compartment warewashing sink. Smooth floors, walls and ceilings with a coved base, self-closing doors, shielded lighting, and screens or air curtains for pest control.

3. What they check at the commissary

Adequate food and equipment storage, dishwashing facilities that meet food service standards, and a servicing area on a nonabsorbent, sloped surface with a grease trap and a hot water faucet for cleaning garbage cans.

While you operate

Your mobile unit permit and your inspection scores both have to be posted where the public can see them. And any menu change needs health department approval — it is not optional paperwork.
